You're right about them seeming atypical. They are not really professions. However, keep in mind Sword Saint or so on are not things you are employed as as well. The easiest way to analyze it is with how they function. Blood Drinker is probably the class Shalltear uses to store blood for casting spells and so forth. Recall Vampires are NOT casters in /yggdrasil. Next consider shapeshifter, it lets you emulate enemies, feats and all up to certain levels. A high doppelganger specialized in shapeshifting can emulate others higher. Demiurge's shapeshifter likely is related to his mode changes and body augmentations. In those cases it's like how Entoma's centipedes work as whips etc - he's using natural weapons (muscles, claws, wings, etc) however they are likely not counted purely as natural weapons but rather buff spells (ie it only counts as unarmed not natural) etc. The nuance needs more rules to clarify but likely all these racial-like Jobs have an element of not using inherent advantages and are not part of the person's race normally.
Shalltear's is the only one that proves that, however you can postulate how ineffectual Demiurge is in combat is also based on the oddity with these classes not synergizing with one's race - they are like racial options you can learn. One thing this does is obfiscate the game design to obscure secret mechanics and prestige classes but it also creates flexibility in builds by removing features that seem like they would just be part of the main class. YGGDRASIL's developers loved this sort of design.
Given how Demiurge specializes in summoning ( he can summon Evil lords and all sorts of demons up to Lv. 80 like how Ainz can), likely that's why his combat stats suck - he's using these jank classes for his direct combat ability. Gazer seems like just cringe status effects . Shalltear's blood drinker isn't so bad because she's not a Vampire but Vamp Cleric so it does help her casting and synergizes with blood rage.
